Fantasy Fudge

3 cups granulated sugar
3/4 cup butter
2/3 cup evaporated milk
12 oz. bag semi-sweet chocolate chips
7 oz. jar marshmallow cream
1 tsp. vanilla extract
1 cup chopped walnuts OR pecans - optional


-In a 2-quart saucepan, bring sugar, butter, and milk to a rolling boil (240 degrees) for 5 minutes, stirring constantly; remove from heat.
-Stir in chocolate chips, marshmallow cream, vanilla, then nuts.
-Pour into a greased 13" X 9" X 2" pan.
-Cool to room temperature before slicing.

Grandma Jo's Cheese Roll

Grandma Jo's Cheese Roll
1 lb. Longhorn (colby) cheese -grated
1/2 lb. sharp cheddar cheese -grated
1 pkg softened cream cheese
1/2 cup mayonnaise
1 1/2 tsp garlic salt
1 cup chopped pecans (optional)

Mix cream cheese, mayo and garlic salt - then work into grated cheeses until smooth. Add nuts and blend together. Shape into log roll or cheese ball.

Sprinkle 1 1/2 tsp chili powder, 1 1/2 tsp cayenne pepper and 1 tsp paprika on wax paper and roll your cheese ball/log to coat. Serve with crackers.

Fudgey Popcorn - White Chocolate











First you pop two full batches of popcorn.











Then you pick out any unpopped kernels.











Spread our on waxed paper and pour 1 block of melted almond bark over the popcorn. Stir to coat. Let air dry for an hour or so then store in airtight container.















For variation, I've added:
  • 1 T peanut butter
  • sprinkled drying popcorn with sparkley colored sugars
  • mini-chocolate chips
  • sugared pecans
It's ALL good!

Pecan Turtle Candies


Pecan Turtles (bottom right)

1 pkg square pretzels (Snyders Waffle Pretzel, I think)
Rolo Candies
Pecan Halves

Warm oven to 250, put unwrapped Rolo candy on pretzel. Bake 5 minutes or until Rolo is softened. Place pecan on Rolo and press down.
